What is food traceability?
Food traceability is the ability to track a food product through every stage of production, processing, and distribution, so as to identify its origin and, in the event of an alert, carry out a targeted withdrawal or recall.
It is required by article 18 of Regulation (EC) No 178/2002, the foundation of the “Hygiene Package,” in force since January 1, 2005. Every operator must be able to identify its suppliers and its direct customers (the “one step back, one step forward” principle).
