What is the Hygiene Package?
The “Hygiene Package” is the set of European regulations that came into force on January 1, 2006 and harmonize food-safety rules for every actor in the food chain, “from farm to fork.”
It brings together, notably, Regulations (EC) No 178/2002 (general principles and traceability), 852/2004 (food hygiene and HACCP), and 853/2004 (rules for products of animal origin). It makes each operator responsible for controlling its own hazards.
